Ras Dashen (pronounced Rahs DAH-shen) is the highest mountain in Ethiopia (and fourth highest in Africa), and is located in the Simien Mountains National Park. Zenash, the chef and founder of Ras Dashen Ethiopian Restaurant grew up near these mountains and is proud to offer you traditional home cooked meals. Comfort Food from the Mountains of Ethiopia.
Ethiopian food is traditionally shared by everyone at the table. Order for your table from the daily menu, choosing one entree per person. Three side dishes per table come with your meal; you may choose your own side dish from the 12 side items. Your food will be served in traditional Ethiopian style, on a round of injera, the sour spongy bread which serves as both your plate and your eating utensil. Chicago, IL (June 24, 2005) IVCC held the dinner for Chicago's up and coming young professionals and entrepreneurs with interest in world affairs and to promote mutual understanding and appreciation amongst cultures through citizen-based diplomacy.
Ras Dashen Ethiopian Restaurant's bolder; more exotic tastes furthered the groups' emersion in another culture. Ethiopian cuisine which evolved over thousand of years are still served authentic without any infusion from European or Asian cuisine since Ethiopia is the only African country that was never colonized.
Eating with their hands is the most memorable experience Americans walk away with from dining at Ras Dashen Ethiopian Restaurant. Ras Dashen has a large vegetarian & vegan dish selection since the Ethiopians observe over 100 days of fasting during which the Ethiopian Orthodox church mandates having no meat, fat, eggs or milk. Other than vegan choices the cuisine is also rich in lamb, poultry and beef dishes either sautéed to perfection or prepared in the unique spicy hot stew called ‘Wot ‘ or its mild counterpart ‘Alicha'.
Chef Zenash Beyene of Ras Dashen Ethiopian Restaurant in Chicago is considered one of the Great Ethiopian Chefs who excel in the quality of traditional Ethiopian cooking. Chef Zenash has been recognized in Chicago 's "Great Chefs Series", Public Radio and ABC TV's 'Hungry Hound' program. Zenash is one of very few if not the only Ethiopian Jew "Beta Israel " operating an Ethiopian Restaurant in America . Apart from her unique religious background Zenash has had a colorful life living in Saudi Arabia and Sudan where she operated her own Ethiopian Restaurants.
